Homemade Gluten Free protein bars, yum!

I am always looking for creative ways to eat healthy and like what I am eating. So I did a search this weekend for gluten-free protein bars and I found this recipe that I had to tweak of course…just because that is how I am 😉 I made them and they are good, reminding me of the peanut butter delights I had in school…many moons ago but who is counting right?

Try them and see if you like them!

Homemade Protein bars
1 1/3 c of oats (I used Coach’s Oats)
4 scoops of chocolate protein powder (I used whey)
1 c dry nonfat dry milk
1/3 c each: dried cranberries, raisins, (small amounts of coconut, chopped walnuts)
5 TBsp peanut butter
3/4 c water
1 tsp vanilla

I used non stick aluminum foil to line pan, mix all dry ingredients, mix water & vanilla until smooth. Spoon into pan & smooth. refrigerate for two hours. Cut and individually wrap. Makes approximately 9 bars if cut evenly.

Based on original recipe and can vary depending on what you add in.
